I’m not a good cook, but I really like food and if there’s one thing I’ve learnt from all my food adventures in life. Good food doesn’t have to be complicated or difficult, which is why I make cooking videos based around unremarkable ingredients such as Spam, tuna…and now, sweetcorn kernels.
Here’s 5 easy to make canned corn recipes that will make you put canned corn on your grocery list every week! So here’s the ingredients list you’ll need to make each sweetcorn dish.

1. Corn Fritters:
– 1 cup corn kernels (fresh, frozen, or canned)*
– 1 cup whole wheat flour
– 1/2 cup finely chopped red or green pepper
– 1/4 cup finely chopped cilantro
– 1/4 cup finely chopped green onion
– 1/2 jalapeño, finely diced
– 2 teaspoons minced garlic
– 1/2 teaspoon smoked paprika
– 1/2 teaspoon salt
– couple pinches fresh ground black pepper
– 1 large eggs
– 2 Tablespoons cooking oil for frying
– Garlic aioli / or any other condiment you like
2. Korean corn cheese
– 1 can whole kernel corn (no salt added) *drained*
– 1 tbsp unsalted butter
– 1 big dollop mayonnaise
– 1/2 tsp white granulated sugar
– salt and pepper *to taste*
– 1 cup shredded mozzarella cheese
– 2 spring onions *thinly sliced*
3. Creamed corn meat & rice
– 2 cups of cooked rice
– 1/2 cup corn kernels
– 1 can cream corn
– 1 cup water
– 1 stick green onion
– 1 large egg
– 1 teaspoon vegetable oil
– 300g pork (bite size pieces)
– 1 tbsp sesame oil
– 1 tsp salt
– 1 tsp sugar
– 1 tbsp soy sauce
– salt and pepper to taste
4. Perfect Grilled Corn Salsa
– 1/2 can of corn kernels (drained)
– 1/4 red onion (diced)
– 2 ripe tomatoes (seeds slightly removed and diced)
– 1 whole serrano or jalapeño pepper (seeded and minced)
– Sea salt and ground black pepper (to taste)
– 1 medium lime, juiced
– 1/3 cup fresh cilantro (chopped)
5. Chicken egg drop soup
– 2 cups (500ml) chicken or vegetable broth/stock
– 3/4 can creamed corn
– 1 tsp soy sauce (all purpose or light)
– 2 thin slices of ginger
– 1 tbsp minced garlic (optional)
– 1 egg
– 1 cup shredded cooked chicken (about 1 large uncooked chicken thigh)
– Salt and white pepper to taste
– 3 tbsp sliced scallions / shallots (optional)
