Recipe :
Tiffin Recipes
Ingredients:
Egg Cheese Rolls:
2 Eggs
2 Cheese Slices
Atta Dough
Spring Onions
Chopped tomatoes
Chopped capsicum
Salt to taste
Rec chili powder to taste
4 tsp Oil
2 tbsp ketchup
Method:
Roll out two 10” large rotis. Cook on a tawa with a little oil.
Break the eggs in a bowl. Add chopped vegetables, ½ tsp salt, ½ tsp red chili powder and beat well.
Add a little oil to pan. Pour half the batter in the pan. spread the batter all over pan. place the roti over it and press down. Cook till eggs are well cooked. Remove the roti. Spread a little ketchup over it. Cut cheese slices into half. Place in the center and roll into a tight roll.

Lemon Rice:
Ingredients:
1 ½ cup Boiled Rice
½ tsp Mustard Seeds
6-7 Curry Leaves
8-10 Cashew Nuts
½ cup Peanuts
2 Lemons
2 Whole red chillies
1 tsp Chana dal
1 tsp Urad dal
½ tsp Chopped ginger
½ tsp Turmeric Powder
1 tbsp oil
Method:
Heat oil in a pan. fry the peanuts till lightly brown. Remove and set aside. To same pan, add mustard seeds, add dals and sauté till golden. Add the whole red chilies, curry leaves, cashew nuts. ½ tsp turmeric powder and sauté for a minute. Add the boiled rice, salt and mix well till rice is well coated with the tempering. Remove from heat. Add peanuts and then juice of 2 lemons. Mix well and serve.

Cheese Pizza Sandwich:
Ingredients:
4 Sandwich Bread
2 Cheese slices
2 tbsp Chopped Tomatoes
2 tbsp Chopped Capsicum
2 tbsp Chopped Onion
2 tbsp Corn
¼ cup Pizza Sauce
2 tbsp Butter
1 tsp Pizza Seasoning
Method:
In a bowl, mix together the pizza sauce with all vegetables and seasoning. Butter one side of the bread slices. Place a cheese slice over it. Place some stuffing. Place the second bread slice buttered side up. Grill in a sandwich grill.

Rava Appe:
Ingredients:
1 cup rava / semolina
½ cup yogurt
salt to taste
½ cup water
1 inch ginger (grated)
1 green chilli (finely chopped)
½ onion (finely chopped)
2 tbsp coriander leaves (finely chopped)
½ tsp baking powder
Oil
Method:
Mix together all ingredients in a bowl and set aside to rest for 5 minutes. Heat the appa pan. add a few drops of oil in each cavity. Pour a tablespoon of batter in each cavity and cover and cook till appe is cooked. Flip and cook till the other side is golden too. Serve.

Burritos:
Ingredients:
1 cup cooked rice
2 tbsp fresh coriander, chopped
1/2 medium onion, diced
3 to 4 cloves garlic, minced
2 tbsp vegetable oil
1 cup boiled Rajma
1 tsp chili powder
1/2 teaspoon jeera powder
3 tablespoon salsa spread
salt, to taste
2 (10-inch) large tortillas/ Rotis
¼ cup mozzarella cheese
For the Salsa:
2 tbsp Chopped Tomatoes
2 tbsp fresh coriander, chopped
1 tsp chopped green chilies
2 tbsp lemon juice
2 tbsp Chopped Onion
Method:
Heat the oil. Add the chopped garlic, onions, capsicum and sauté till translucent. Add boiled rajma and all powdered spices and mash well. Remove from heat and set aside to cool.
Mix together all ingredients for the salsa. Warm the tortilla on a pan. spread the salsa spread. Arrange ¼ cup rice in the center. Top with rajma mixture, then the fresh salsa and then the diced cheese. Roll tight and warm in a pan for 2 minutes or microwave for 30 seconds.

No Bread Sandwich:
Ingredients:
1 cup rava
¾ cup yogurt
salt to taste
½ cup water
2 tbsp coriander leaves (finely chopped)
½ tsp baking powder
2 tbsp oil
½ onion (finely chopped)
2 tbsp chopped tomatoes
2 tbsp chopped onions
4 Cheese Slices
½ cup boiled mashed potatoes
Method:
Mix together the rava, curd and ½ tsp salt, ½ cup water, baking powder and mix well to form thick batter. keep aside.
Mix chopped vegetables in the mashed potatoes and season to taste.
Place a tablespoon of the mixture in the cheese slice and fold in a triangle.
Pour 2 tbsp rava mixture in each sandwich maker cavity. Place 1 cheese triangle in the cavity. Cover with more batter and cover . Cook till the sandwich is well cooked. Remove and serve.
