Loaded Potato Salad
4-5 Russet Potatoes, scrubbed clean
5 strips cook bacon
1 cup shredded sharp cheddar
1/2 onion, minced (or green onion or scallion)
1-2 tbsp *Hidden Valley Dip, in Creamy Dill flavor
3/4 cup sour cream
3 tbsp mayo
Bake potatoes, wrapped in foil and covered in olive oil and salt for 1 hour at 426 degrees or until soft. While potatoes are baking, mix together sour cream, mayo, and dill seasoning. Set aside. Cool potatoes for 30 minutes. Slice into 1.5 inch chunks and place into large bowl. Next add minced onion, cheese, bacon, and dressing. Toss potatoes to coat. Place in dish and cover with plastic wrap. Place in the fridge for at least 1 hour before serving. ***To reheat as potato casserole (HIGHLY recommend)..simply cover with tin toil and bake for 1 hour at 350 degrees. I also stirred occasionally to insure proper heating throughout.***

Homemade Blue Cheese Dressing
1 Cup Sour Cream
3 Tbsp Mayo
1 Packet Hidden Valley Ranch
Few dashes of Worcestershire Sauce
Blue Cheese Crumbles
-Add splash of milk or 2 to desired consistency.
