RECIPE
Healthy Raw Vegan Chocolate Chip Cookie Dough Balls
9 pitted dates
1/2 teaspoon pure vanilla
1/4 teaspoon cinnamon (optional, but really good!)
3 tablespoons coconut flour
1/2 cup cashews
1 1/2 tablespoons organic maple syrup
1/4 teaspoon fine sea salt
1/4-1/3 cup dairy-free dark chocolate chips (I use Guittard Extra Dark)
Place dates in a food processor and process until a paste forms.
Add remaining ingredients except chocolate chips and process until a dough forms. The dough should be fairly smooth but still have a little bit of texture.
Scrape dough into a bowl. Tear off a piece and flatten slightly in your hand. Add a few chocolate chips (or raw cacao nibs for a fully raw treat) and roll into a ball. Add a few more chocolate chips around the outside of the ball.
You should get 9-10 balls from this recipe.
Store in the refrigerator.
