Today I’m sharing my favorite healthy egg recipes. These egg recipe and meal ideas can be made for breakfast, lunch, or dinner.
Pasture raised eggs are my top choice for eggs for so many reasons. Raising chickens on pasture is better for the animals, the soil, and for us! For me, eggs are a daily part of my diet. I find them satisfying & filling. Plus, they’re higher in omega-3s, vitamin A, and vitamin E.

6 eggs (pasture-raised strongly recommended)
1 tbsp high heat oil (avocado, ghee, or pasture-raised bacon fat)
1 cup chopped mushrooms
1 1/2 cup roughly chopped fresh broccoli
2-3 cloves minced garlic
1/2 tsp unmodified potato starch (https://amzn.to/2PYxrn9)
3 handfuls of baby spinach
1/3 cup grass-fed/local cheese shredded cheese, I used
Salt and pepper
Preheat oven to 350
Heat a cast iron or oven-safe pan over medium heat with the oil
Add the broccoli to the pan and cook for 3 minutes
Add the mushrooms and garlic, cook additional 3 minutes
Meanwhile, whisk the eggs together in a separate bowl with 1/2 tsp salt, pinch of pepper, potato starch, garlic, fold in the cheese, set aside
Add a pinch of salt and pepper to the veggies and stir
Off the heat and fold in baby spinach to the pan until wilted
Pour the eggs over the veggies
Transfer the pan to the oven and cook for 20 minutes
Remove from oven and garnish with fresh herbs if you have them! Slice and enjoy!
