Let’s make some ribs.
These spare ribs from @swift__meats were seasoned with @oldarthursbbq seasoning, check my last post to see the full prep, and they hit the @biggreenegg at 250 degrees for 3 hours. After 3 hours, I wrapped them in foil with butter, more seasoning and a spray of apple cider vinegar. They went back on the egg for one more hour, and when they were temping around 200 internal, I pulled them off and rested for an hour.
This rest slows down the cooking process and let’s the ribs get super tender. After the rest, they went back on the grill, got sauced up, and cooked for 10-15 minutes more.
