Qeema Pakoray (qeema puffs)
• Chicken qeema/mince 250 grams
• Green chilies2-3, chopped
• fresh coriander 3 tbsp, chopped
• All purpose flour 4 tbsp
• salt to taste
• Red chili powder 1 tsp
Turmeric powder 1/2 tsp
• Chaat masala 1/2 tsp
• Baking powder 1/4 tsp
• Eggs 2

Matar k Crispy Pakoray (Peas Pakoray/ Peas Fritters)

• Fresh green peas, 2.5 cups, lightly blanched
• Coriander leaves 1 big bunch or 1/2 cup
• Garlic cloves 3 big
• Green chilies 2-3 (you may add more if you prefer spicy)
• Cumin powder 1 teaspoon
• Gram flour (Besan) 1.5 cup
Onion 1 big, sliced
• Salt to taste
• Oil for frying

Spicy & Chatpati Imli Chutney – Tamarind Chutney
• Tamarind Chutney 150 grams
• Water 1 cups, to soak the tamarind
• Salt to taste
• Red chili powder 1 tsp
• Cumin powder 1.5 tsp
• Coriander powder 1 tsp
• Sugar 1 tbsp (to cut down the acidity a bit)
• Fresh Mint leaves, a handful
• Water 1-2 cups
Cook everything. Store in fridge or freezer. To make chutney for pakora, blend this chutney with water, mint leaves and chaat masala.

Khatti Lobia Chaat
• Boiled chickpeas
• Boiled red kidney beans
• Boiled black beans
• Boiled potatoes
• Onion
• Mint
Tomato
• Cucumber
• Salt
• Cumin powder
• Coriander powder
• Chaat masala
• Imli pulp

Tastiest Chicken Nihari Recipe
Ingredients
Nihari Spice Mix
Whole spices:
• Cumin seeds 2 teaspoons
• Coriander seeds 4 teaspoons
• Fennel seeds 4 teaspoons
• Cinnamon stick 2 inch, broken
• Black cardamoms 2, broken
• Green cardamoms 4, broken
• Cloves 4
Powdered spices
• Salt 1 teaspoon
• Red chili powder 1 teaspoon
• Kashmiri chilli powder 3 teaspoons [you can use paprika powder too]
• Turmeric powder 3/4 teaspoon
• 1 teaspoon salt
Nihari spice mix: In a pan dry roast whole spices until aromatic. Allow to cool and grind into a fine powder. Add powdered spices and mix. Nihari spice mix is ready.
Chicken Nihari Ingredient
• Chicken, 1/2 kg cut into pieces [Boneless or on bones]
• Oil 1/2 cup
• Onions 1 medium, blended into paste
• Nihari spice mix 2-3 tablespoons
• Ginger paste 1 teaspoon
• Garlic paste 1 teaspoon
• Water 2 cups
• Corn flour 1-2 tablespoons mixed in 2 tablespoons water
Garnish
• Ginger cut in julienne 1 inch
• Fresh coriander finely chopped
• Fresh mint finely chopped
• Lemon wedges
• Green chilies chopped

Degi Qeema Biryani
Boiled Rice
• Rice 3 cups
• Cinnamon sticks 2 big
• Star anise 2
• Green Cardamom 4
• Black Cardamom 2
• Black Peppercorns 12
• Cloves 6
• Bay Leaves 3
• Salt 1.5 teaspoon
Gravy
• Oil 1/4 cup
• Onions very big size 2-3, sliced
• Bay leaf 2
• Cinnamon sticks 2 medium sized
• Cloves 6
• Green Cardamoms 4
• Ginger paste 1 tbsp
• Garlic paste 1 tbsp
• Green chilies
• Tomatoes 3-4 big, chopped
• Salt to taste
• Red chili powder to taste
• Turmeric powder 1 tsp
• Cumin Powder 1 tsp
• Garam masala 1 tsp
• Coriander powder 2 tsp
• Chicken Mince 1 kg+Water 1/2 cup
• Tomato paste 2 tbsp
Biryani Layers
• Fresh Mint leaves chopped
• Green Chilies chopped
• Ginger, julienned
• Lemon slices
• Tamarind pulp
• Yellow food color

Knot Pizza
Pizza Dough
• All-purpose flour 1.5 cup
• Instant Yeast 1 tbsp
• Sugar 1 tbsp
• Salt 1 tsp
• Oil 2 tbsp
• Luke warm water 3/4 cup
Topping
• Chicken 1/2 cup, finely chopped
• Onion 1/2, sliced
• Green bell pepper 1/2, sliced
• Red bell pepper 1/2, sliced
• Salt to taste
• Paprika powder 1/2 tsp
• Garlic powder 1/4 tsp
• Black pepper powder to taste
• Oregano 1/2 tsp
Other
Cream cheese spread
• Pizza sauce
• Mozzarella cheese
• Oregano
Bake for 15-20 minutes at 220°C in a preheated oven.
