In this video, I have shown how to prepare quick Indian vegetarian lunch meal. These are easy to follow healthy recipes which can be made quick and easy Lunch menu recipes at home in summer.

Sweet and Sour Arhar Dal (Toor Dal)

Ingredients

250 gm Toor Dal
1/2 chopped tomato
10 curry leaves
2 dry chili
1 tsp mustard seed
2 tsp jaggery powder
1 tbs tamarind paste
Salt to taste
Red chili according to taste
1tsp Turmeric powder
Green chili (optional)
8 crust peanut (roasted)

Process
——————-
At first, pressure cook the dal with tomato. Once dal is boiled, add tamarind paste, red chili powder, turmeric powder and salt to taste. Roast some peanuts on a pan and crush them in a pastel.
For the tarka
In a pan add oil, give the mustard seeds, curry leaves and dry red chili. When they start to crackle add the dal and stir well. Then add crust peanut and keep it on simmer for 5 minutes. After that add jaggery powder and put the flame high for 2 minutes. Your dal is ready to serve. Enjoy while its hot !!

Broad beans sabzi

Ingredients

500 gms broad beans
1 chopped tomato
1 tsp cumin seeds
1 tsp hing
1 tsp coriander powder
1 tsp red chili powder
salt to taste
1 tsp turmeric powder
1/8 tsp anardana powder

Process
——————-
Chop the beans as per shown in the video. Take a pan, add oil, once the oil becomes hot, add hing and cumin seeds. Once seeds start to crackle, add the tomatoes and cover it with a lid. When the tomatoes are cooked, add the beans and add red chili powder, coriander powder, turmeric powder and salt to taste. Stir well and cover it with a lid. When the beans are soft, add the anardana powder and its ready to serve.
