How to make an easy breakfast of eggs and bagels.
Ingredients:
Bagel
2 Eggs
2 Tablespoons Milk (30ml)
Salt & Pepper to Taste
Diced Tomato
Diced Jalapeño
Cilantro
Chopped Bell Pepper
Chopped Mushrooms
Cheese
Directions:
1. Open the bagel and carefully hollow out each half. Set aside. In a small bowl, whisk together the eggs, milk, salt, and pepper. Fill each bagel half with your desired fillings (ex: tomato, jalapeño, cilantro / bell pepper, mushrooms). Each half can contain about 2 tablespoons of fillings. Then pour the egg mixture into each bagel half, covering the fillings completely. Top with cheese if using. Bake in a preheated oven at 350F for 10 minutes or until set. Serve warm with salsa.
